cauliflower

Over the last month I’ve been trying to dial in the perfect recipe for mashed cauliflower–a fat-free, low calorie alternative to those butter packed, cream infused mashed potatoes that are bidding my taste buds on Thanksgiving Day.

After 12 attempts, here’s recipe I’ve developed:

2 heads of fresh cauliflower
8 cups of chicken broth 
2 heads of fresh garlic
1 bundle of green onions
Salt and pepper to taste

Wash and cube two fresh heads of cauliflower into one inch squares. Pour the chunks and cauli-shrapnel into 8 cups of chicken broth. I’m normally super picky about my chicken broth, but for this recipe an inexpensive chicken broth powder is fine since the liquid be drained.

Add chopped green onion to pot. Bring all ingredients to a boil for 20-25 minutes until cauliflower is tender.

Pour into colander. Use a potato masher in the colander to squeeze out as much liquid as possible. For a more hands-on approach, mash the cauliflower, garlic, onion mixture to desired texture. Or short-cut and use cuisines or blender. Add salt and pepper for taste. You can also add butter and cream as desired, but if you do, maybe you should have just gone for mashed potatoes in the first place.

 

Spoon yourself a bowl and dig in!
