Melt-In-Your-Mouth Mock Toffee Recipe

While in Sacramento, California for an amazing time with The Shore of Bayside Church, Leif and I stopped by Whole Foods for a quick deli dinner.

To our surprise, the employees were holding a contest for best dessert. Shoppers were encouraged to vote from the employee’s recipe that was the most delicious. I admit to trying, um, almost all of them and the most delicious to me was the Mock Toffee. If you’ve never made it before, it’s a quick way to create amazing toffee in just a few minutes and can be created with rice crackers or gluten free crackers, too!

Check it out:

1 single sleeve of Saltine crackers

1 cup butter

1 cup brown sugar

1 bag chocolate chips (12 oz)

1 cup walnuts

  • Line a cookie sheet and sides with foil.
  • Line foil with crackers.
  • Preheat oven to 375 degrees.
  • In a sauce pain, bring butter and brown sugar to a boil for 3 minutes, stirring constantly.
  • Pour brown sugar mixture over crackers.
  • Bake at 375 degrees for 5 minutes. Remove from oven.
  • Pour chocolate chips over crackers. Let melt.
  • Spread and sprinkle with nuts.
  • Refrigerate or freeze.
  • To serve, break up into small pieces and enjoy.
